Made from old vine Dolcetto grapes that have been consistently pruned, assuring fruit concentration by limiting production to circa 45ql per hectare. This noble wine displays a ruby color with a supple nose of crushed ripe berries and baking spices with balanced acidity. This wine lends itself well to aging. The well-rounded and confident nature is best explained by the attention given to hand harvest, hand sorting and strict temperature control throughout the wine making process. Typically, it ages 12 months in 80% neutral French Oak that is maintained at 5 C / 40 F for the winter in our temperature-controlled cellar. It is bottled after a single traditional racking without filtration and on a waning moon cycle which is favorable for wines suitable for aging. Decant and serve at 60-65F.
