This wine is composed of late autumn Barbera hand selected from old vines planted in the 1940’s. The rigorous selection process provides a strong foundation for the purple and plum hues with notes of sweet tobacco, leather and spice. The well-rounded and confident nature is best explained by the attention given to hand harvest, hand sorting and strict temperature control throughout the wine making process. Typically, it ages 12 months in 80% neutral French Oak that is maintained at 5 C / 40 F for the winter in our temperature-controlled cellar. It is bottled after a single traditional racking without filtration and on a waning moon cycle which is favorable for wines suitable for aging. Decant and serve at 60-65F.
